If you’ve never thought of airports as a key player in Canada’s culinary landscape, think again! Throughout this panel, moderator Geneviève Piché (Manager - Premium Lounges, Air Canada) will chat with representatives from airports across the country to learn how they offer a unique taste of place. Conversations on Indigenous Culinary Tourism We’re bringing together prominent chefs and tourism experts for an important conversation on Indigenous culinary tourism. Join Pierre Kanapé (Development Advisor, Indigenous Tourism Québec), Chef Maxime Lizotte, and Chef Stéphane Modat to explore the landscape of Indigenous culinary tourism in Canada and learn more about what we can all do to nurture and support this growing industry.

2. Opening Keynote with chef Rodrigo Pacheco

The summit kicks off with a keynote address by Chef Rodrigo Pacheco, a nature-based culinary explorer who’ll be sharing his vision for gastronomy as a catalyst for environmental conservation. Chef Pacheco is a United Nations Food & Agriculture Goodwill Ambassador who has spent the past decade transforming deteriorated parcels of land into thriving habitats for wildlife and indigenous produce that supply their restaurant and eco-hotel on the rural coast of Ecuador’s Manabí province.

1. Closing Keynote with Jean-Martin Fortier

Our closing keynote speaker is Jean-Martin Fortier, a farmer, educator, and bestselling author who is advocating for agritourism’s role in crafting a sustainable culinary future and demonstrating how small ecological farms can disrupt the current globalized food system and provide an alternative. His current projects include Espace Old Mill, a farm-to-table restaurant and market garden space in Québec’s Eastern Townships.
